White balance

Couldn't find an exact forum - so opted for the nearest!
Reading a number of items I keep seeing references to "Setting the White Balance". It seems from what I have read getting this right is particularly important for UW pictures.
A direct lift from the camera's user guide is:

The White Balance setting adjusts color balance, with settings for Auto, Daylight, Cloudy, Incandescent, Fluorescent, and Fluorescent H (for daylight fluorescent lighting). There's also a Custom setting to manually set color balance based on a white or gray card.

Now the thought of taking a white or gray card down on a dive would cause just too much derision from my buddies

So, my point is - White Balance is a Black Art to me. Can someone explain and advise?
